🎄December 🎄- Dark Chocolate with Fuji Apples

Did you know:

The Fuji apple is an apple cultivar developed by growers at Tohoku Research Station in Fujisaki, Aomori, Japan, in the late 1930s and brought to market in 1962. It originated as a cross between two American apple varieties—the Red Delicious and old Virginia Ralls Janet apples.

This chocolate is made by grinding our Philippine sourced cacao with organic Fuji apples. We then taste and added a bit of extra organic cane sugar for just the right amount of sweetness and some of our cocoa butter for that perfect mouthfeel. Then we conche—but not for too long since we don’t want to drive the Fuji apple aromatics away.

Ingredients: cacao, organic cane sugar, cocoa butter, organic fuji apples.

November -Lina’s Langka (Jack Fruit) Milk Chocolate

Jackfruit has subtle pineapple and banana-like flavors. It is often used as an ingredient in Filipino desserts such as halo-halo and turon. This bar was made at the request of Lina, Jeremy’s mother-in-law, who loves langka (and who wouldn’t stop hinting that she’d be interested in a jackfruit milk chocolate).

Having a persistent mother-in-law is quite the incentive for securing a source. We managed to track down a supplier, and although their jackfruit preparation is quite expensive, we feel the chocolate in this production is some of the best we’ve made all year.

Ingredients: Philippine cacao, cocoa butter, whole milk powder, raw cane sugar, jackfruit.

October - Pumpkin Five-Spice Milk Chocolate

Yes, we got on the pumpkin spice bandwagon but in 100% Oodaalolly fashion, we changed things up to challenge your expectations.

Act fast, this is strictly seasonal.

Ingredients: Cocoa butter, raw cane sugar, whole milk powder, Philippine cacao, pumpkin powder, five-spice blend (star anise, cloves, cinnamon, fennel seed, Sichuan pepper), and vanilla.

September - Tia Broma’s Peach Mango and Strawberry Hibiscus Bars

Both of these bars are juicy and creamy. The flavor is wobbly, going back and forth between sweet and salty, with a hint of something special towards the end. You have to experience it to understand.

Tia Broma’s treats use natural ingredients—actual mangoes, peaches, strawberries, and hibiscus. No chemicals or substitutes. Fun flavors don’t mean wacky ingredients you can’t pronounce. 100% Kid Friendly

August - Buko Pandan “White” Chocolate Bar

Buko pandan is a popular dessert among Filipinos and the inspiration for this new chocolate bar.

Pandan has a flowery aroma and a pleasant white rice flavor. We added shredded coconut to enhance the grassy vanilla tones of the pandan.

It also makes the bar quite green!

Ingredients: Cocoa butter, raw cane sugar, coconut milk powder, pandan leaf powder, shredded coconut, and vanilla.

July - Milk Chocolate Ube Butter Cream Mullet Bar

Who cares how hot it is outside? Not us, and that’s why we’re releasing a milk chocolate bar to kick off summer, and it’s just what you need to get it started right. It’s not just any chocolate bar; it’s our brand new Oodaalolly milk chocolate ube butter cream mullet bar!

It’s slightly messy, somewhat sugary, and sticks to your fingers while also sticking a smile on your face.  

Ingredients: (Chocolate) Raw cane sugar, cacao, cocoa butter, whole milk powder, soy lecithin (less than 0.01% by weight).

(Ube Crackers) Wheat flour, sugar, vegetable oil (partially hydrogenated &/or hydrogenated coconut, palm, palm kernel or blends), ube (purple yam) powder, milk powder, salt, baking soda, artificial butter and ube (purple yam) flavors.

June - Ilanon “Siko Karwang” Kapélaté Bars featuring Umaga Roasted Philippine Coffee Beans

Dark Kapélaté / 70% Coffee (VEGAN)

🍫 ≈ ☕️☕️ This bar is a mule kick of caffeine and flavor. It’s a work in progress but if you like your coffee black, you may be able to handle it. If you don’t, well, you might want to skip this one.

Don’t say we didn’t warn you!

Each Dark Kapélaté ≈ 130 mg of caffeine. If made from cacao - it would be a 70% bar.

Ingredients: Coffee (Philippines Umaga Blend 01), cocoa butter (Ecuador), raw cane sugar.

Light Kapélaté / 45% Coffee (Umaga Blend 02) + Whole Milk (NOT VEGAN)

🍫 ≈ ½☕️ A light and sweet coffee with a Cracker Jack flavor and Swiss-style milk creaminess. That’s a lot of flavors packed in one bar. We think you can handle it - and it won’t leave you with too bad a case of coffee breath!

Each Milk Kapélaté ≈ 50 mg of caffeine. If made from cacao - it would be a 45% bar.

Ingredients: Cocoa butter (Ecuador), whole milk powder, raw cane sugar, coffee (Philippines - Umaga Blend 02).

May - 75% Cacao Lemon & Sumac Bar

We made this chocolate for Eid al-Fitr, the "Festival of Breaking the Fast." We opted for higher cacao chocolate because we wanted something refreshing, not necessarily sweet.

Eid is called Hariraya in many parts of the Philippines. It is characterized by giving gifts (known as Eidi), food sharing (salu-salo), and visiting the elderly and the sick.

Each package contains one 30g / 1.06 oz bar in a heat-sealed pouch.

100% Vegan

Prepared on new and separate equipment.

Ingredients: Cacao, organic cane sugar, cocoa butter, sumac, lemon juice powder (lemon juice solids, maltodextrin, lemon oil).
