OODAALOLLY INTRODUCES MUSHROOM MILK CHOCOLATE BAR IN PARTNERSHIP WITH PERFECT DAY

Oodaalolly presents its sustainable, equitable, and delectable vision for the future of chocolate in an industry-leading partnership that puts craft chocolate firmly in the innovation spotlight.

SAN FRANCISCO, January 25, 2023 — Oodaalolly Chocolate is known for its award-winning bars made using the best Philippine-sourced ingredients. They have now partnered with Perfect Day, Inc., to launch Mushroom Milk Chocolate, a traditional Swiss-style milk chocolate, except instead of using milk from animals or plants, they’ve milked mushrooms—a fungus if we’re being technical.

It tastes better than your average commodity cacao supermarket chocolate bar—an International Chocolate Awards judge tasted a sample—but what’s truly exciting is that milk substitutes like this, if adopted by more people and companies, could help avert climate catastrophe, efficiently feed more people, and eliminates animal suffering.

Fun, Great Tasting Chocolate With An Added Bonus

This unique ingredient comes from sustainable ainimal-free dairy experts at Perfect Day. 

They use a recombinant DNA technique to re-tool a biological factory, Trichoderma reesei, a mesophilic and filamentous fungus, to produce high levels of a specific protein in place of its native enzymes. Then, similar to brewing beer,  the T. reesei colony is placed in a fermentation tank and given food and kept warm. Instead of eating sugar and producing alcohol like yeast, the fungus eats sugar and produces bio-similar milk protein. After a certain period, the proteins and the T. reesei are separated and the “milk” is dried and powdered just like conventional milk typically used in chocolate making.

Compared to conventional proteins, Mushroom Milk emits 97% fewer greenhouse gases, consumes  97% less surface and groundwater, and uses 60% fewer fossil fuels. 

A Product For Early Adopters

We launched this bar on Kickstarter because we wanted consumers willing to take a leap of faith and try innovative new products—true early adopters. “It’s fun talking about mushroom milk and people seem interested in learning about it!” notes Jeremy Burnich, Oodaalolly co-founder. “It’s a fascinating process, and engaging with communities on social media [example on reddit] has been quite rewarding.”
